The timing of this post is partly accidental, and partly intentional. I thought at first it might make sense to talk about the Lenten dishes that in an overwhelmingly Catholic Mexico, frame a series of events that culminate in Semana Santa or “Holy Week”: from the visits to the seven churches and th
